Between the three of us, we’ve got seven kids—so as the school year comes to an end and overwhelm creeps in—we’ve been there, mama. The snacks, the sunscreen battles, the “I’m bored” chants five minutes into summer break. And while it’s true that summer days can feel a little unhinged for moms, we also believe it’s magical for kids. Some of our best childhood memories were made during these hot, sticky, sunscreen-smeared days. We want to give our kids those same joyful summertime memories—without burning ourselves out in the process.

  • Rotisserie Chicken Salad- Shredded chicken, celery, grapes, avocado mayo, lemon juice.  Serve in lettuce cups or on sourdough toast.
  • Chicken Taco Bowl- Chicken, rice, black beans, corn, salsa, cheese.  Top with crushed tortilla chips and lime crema.
  • Chicken Pasta Salad- Pasta, chicken, cucumbers, cherry tomatoes, Italian dressing.

Kid-Approved Quick Dinners:

  • Breakfast-for-dinner: waffles, eggs, fruit.

  • Build-your-own sandwich boards.

  • Veggie quesadillas with guac + yogurt dips.
